Healthy meal of the week: Slow Cooker Turkey Meal
Idea for healthy leftovers: Turkey Thanksgiving Treats
In preparation for the Thanksgiving holiday, here’s a fantastic meal using the handy slow cooker, aka slow cooker, which makes it easy to prepare a delicious tasting turkey. To top it all off, below is a fabulous homemade cranberry sauce recipe with a twist (courtesy of my dad) that just might become your go-to dish for the upcoming holiday season. Don’t be surprised if your family and friends start begging you for this cranberry sauce recipe.
Plus, there’s an easy-to-make leftover idea called Thanksgiving Turkey Delights that you can use if you find yourself leftover food afterwards. It’s a great way to have all the taste of Thanksgiving in the palm of your hands when you have to get to work the next day!
Week 34 Healthy Meals
– Crock Pot (slow cooker)
– 2 stove pans
– wooden spoon
– pear pear (optional)
– 10 minutes
– 3.5 hours (for a 3 pound turkey)
– 3 pounds of turkey (with bone)
– 1 onion
– 1 can of chicken broth
– 1 12 oz. bag of cranberries
– 1/4 cup white sugar
– 1/4 cup brown sugar
– 2 cloves garlic
– 1/4 cup Triple Sec (liquor)
– 1 apple
– 1 orange
– olive oil
– Instant mashed potatoes (prepared according to the instructions on the box)
– seasonings: garlic powder, seasoned salt and pepper
For leftover turkey Thanksgiving goodness
– Delicious multigrain sandwiches (100 calories each)
Here’s an easy way to prepare a delicious turkey in your slow cooker. This sample meal used a 3 pound bone-in turkey breast that fit perfectly in our 3 quart slow cooker. If you plan to use this recipe for your Thanksgiving meal where you may be serving more than 10 people, increase the ingredients and time accordingly. In other words, this 3 pound turkey took 3.5 hours to cook in the slow cooker, a 6 pound turkey should take about 7 hours, etc. The time may be less if you use the highest setting all the time and/or depending on how well done you prefer the turkey meat.
1. Open the turkey wrapper and cut off any excess hanging skin. Leave the skin in place that is still attached to the turkey. With clean hands, lightly coat the entire turkey with a little olive oil. Then rub the seasoned salt, garlic powder, pepper, and 1/4 cup brown sugar over both sides of the turkey.
2. Coat the inside of your slow cooker with olive oil. Cut the onion into thick slices to lay in the bottom of the slow cooker. You should have a nice platform for the turkey to rest on. You may need to cut one or two of the onion slices in half to fit snugly. Pour in the can of chicken broth, add 1/2 cup hot water, then place the turkey over the onion pieces. Place two cloves of garlic on top of the turkey and cover with the lid. Turn slow cooker to HIGH and set timer for one hour.
3. When the timer rings, turn the setting to LOW and reset the kitchen timer (or your phone’s timer) to 2.5 hours. You can also use a turkey baster to carefully squeeze some of the broth all over the turkey. Do this periodically if you want to prevent the turkey from over-drying, just be careful not to press too hard so you don’t strip all those good spices from the meat.
4. When you’re ready to make the fabulous cranberry sauce, in a saucepan over high heat, pour 1 cup of water with 1/4 cup of white sugar and bring to a boil. When boiling add 12 oz. bag of cranberries and bring back to a boil. Once boiling, reduce heat to low and add a handful of chopped oranges and apple slices (both without skins) along with 1/4 cup Triple Sec liqueur. Stir occasionally for a total cooking time of about 15 minutes. You’ll see the cranberries slowly turn from round berries to a mushy mush, a sign that they’re almost done. You may need to mash the leftovers if desired.
5. Finally, the last and simplest part of the meal is the mashed potatoes. If you purchased an instant-style or microwave-style brand, just follow the directions on the container so you have them ready around the same time the turkey is done. Remember, they usually only take about 5 minutes to prepare, so you can save them after the turkey has been sliced and diced.
6. When the turkey is done, carefully remove the cooking part from the slow cooker and drain it with a colander or with a ladle, whichever is easier and more convenient (and safer) for you. Allow the meat to cool a little before using a knife and fork to cut into slices of turkey for you and your family.
7. When everything is ready, serve an appropriate portion for everyone and enjoy your delicious Thanksgiving meal!
Healthy leftover idea: Thanksgiving turkey treats
Here’s a really simple way to make a Thanksgiving meal all in one little deliciousness. The only additional items you will need to purchase are your favorite type of lettuce (if desired) and healthy low calorie bread like these Sandwich Thins used in this example which are only 100 calories for two slices. If your market does not carry this brand, something comparable will suffice.
To prepare these delicious Thanksgiving treats, simply break up the slices and place a few pieces of washed, clean lettuce on one side, then spread a layer of cranberry sauce on the other slice. On top of the cranberry sauce, cover with slices of turkey making sure there are no bones inside. Finally, top with a tablespoon or two of mashed potatoes, then cover with the other slice of bread containing lettuce. Presto, a turkey Thanksgiving treat that’s ready to eat right away, or wrapped in a piece of foil to take with you to work the next day.
*Note: If you don’t like a cold sandwich, you can always reheat it in the microwave on high for 20-30 seconds.
